Instructions

  1. Add bone broth, coconut milk, lemongrass, ginger, lemon juice, mushrooms and chicken to an instant pot and cook on high pressure for 10 minutes. Release pressure.
    Traditionally galangal is used but it’s a bit difficult to find. Ginger is a close substitute.
  2. Optional: stir in fish sauce and lemon juice to taste and remove lemongrass and galangal before serving.
  3. Garnish with cilantro and sliced chili if desired.
